A burrito is just a meal rolled up in a tortilla. Put whatever the hell you want in there. In fact, I think I'll go and make myself a peanut butter & jelly burrito right now.

I'm not a fan of lettuce in my burrito. I used to not care for rice either, but the new place next door to my house makes a damn fine $4 burrito with rice in it. They've only been open a month and I must have eaten there 20 times already.

Lettuce, salad, espinacas (spinach), PBJ, whatever. If it's in a tortilla, it's a Burro (none of this ito nonsense here in southern AZ) Wraps are made with non-tortilla flatbread and served to soccer moms or college students. And yes, if it has roasted red peppers, whole wheat or anything other than flour, shortening (lard is preferable) salt and water, it's not a tortilla.
Regarding the authenticity of whatever one wants in their burro, I remember seeing my dad (3/4 Mexican) put ramen noodles in a tortilla once or twice.
