I try not to eat too much cured meat because of (often) all the nitrates

"Real" prosciutto di Parma has none.

We're fortunate that our local Costco carries an assorted pack of cured meats, also with no nitrates/ites:

I was introduced to prosciutto when working in Brazil. The hotel salad bar had it in unlimited supply. Would make giant sandwiches with some fresh mozzarella and tomatoes. It wasn't until I thought about making them at home that I was eating about $100 worth each day.

Yeah - generally prosciutto is used sparingly, 'cause it's a pretty strong flavor and costs a bundle.

good lord. It is right there on my 2012, not under a cover. Probably was too Japanese like and they made it more German like.

It's there for ventilation purposes - the comfort of blood flow is a small bonus.

The ride is done though, 16.63 miles (cut back from a planned 20) 11 single track 5.5 access road because I bailed. 2:27 at 6.7 with 1531 gain according to the garmins. More tired than I want to be.
