What do you stuff them with? I need to do that...
that was a mix of rice, ground beef, black beans, tomatoes, and cheese. i would've added corn but we were having it on the cob. this was my wife's first stuffed poblano and she liked it more than a regular belle pepper. i foresee more of these in our future.

grilled stuffed poblanos sounds amaz-balls. I may try those over the weekend.

I assume 100% of the stuffing was precooked?
yes, meat and rice were cooked beforehand. i roasted the peppers on the grill for about 10 minutes as well to soften them up so i could shove more filling in them. next time i might add jalapenos too.

Tried a successful experiment today. A month ago I went to Popeyes, and got extra thighs and a biscuit. I vacuum sealed them, and froze them. Happy to report they re-heated extremely well.
wifey does NOT think this is good news...

Usually such posts result in, and I quote;
