It's cold (60?) out, getting dark earlier and earlier, and needed something more suited to fall than summer. So pulled this out of the basement stash, and definitely hits the spot.

Ok, drinking this again tonight, and is quite possibly the best drink I've ever had. My wife has named it the Gracie, and here's the recipe:Mojito, but with ginger instead of mint. Damn this is really, really good. Granted, anything with sugar, lime and rum can't be that bad...
wife said:First, make a simple syrup with ginger. (Ten minutes, tops, but you can double or triple the ingredients and have lots of leftovers for your next batch.)
Take half a cup of sugar and half a cup of water. Put them in a small saucepan and cook on the stove over medium heat until the sugar dissolves. If it bubbles a bit, that's fine, but don't get a boil going or anything. Add thin slices of fresh-cut ginger root. Lots of it. At least 2-3 inches of root. More if you really like ginger. Periodically stir the mixture so that the sugar dissolves and the ginger gets nice and bruised. When the sugar is dissolved, turn off the heat and let cool. You can use it now, and store whatever's left over in the refrigerator.
Then, put half a lime in the bottom of a large mug or glass and muddle it (bash it with a blunt instrument until juiced and bruised).
Add about an ounce of the simply syrup with ginger. More if you really like sweet and/or ginger.
Add two ounces of white rum.
Fill the glass to the brim with ice.
Fill the remains of the glass with club soda.
Stir.
